Catchy name ey?
Hope you are all having lovely weekends (and this is posted on the weekend as I don't know how much I trust my old computer's ability to schedule posts). I am off at Glastonbury festival daaaaarling, so I hope for all our sakes it is ice cream sandwich weather in the UK.
Cos yes, despite the lengthy title and pretentious use of the word "slider" this is less of a recipe and more of instructions about how to assemble a good ice cream sandwich. A really good one.
It was quite literally inspired by the brioche filled ice cream rolls I ate in Sicily a few years ago, and the Georgian peach sliders I spotted on my instagram feed a few days ago. Plus ocado having a flash sale on salted caramel ice cream.
Ingredients - makes 2 delicious sliders, enough for 2 people to have as a dessert or one very greedy person to have whilst lounging in the sun
1 ripe peach
1 teaspoon of sugar
2 brioche rolls
A small handful of raspberries
A pinch of cinnamon
A scoop of ice cream (I used Jude's salted caramel ice cream which went really well and was delicious and on top of this they are really nice and give 10% of their profits to charity, but I think pistachio or vanilla would work well too)
Slice your peach into quarters and then halve those quarters (ok cut your peach into 8) and pop on a baking tray. Sprinkle with 1 teaspoon of sugar and a pinch of cinnamon. Bake at 180 for 15 minutes.
Meanwhile, make yourself a nice little ice tea or summin, and then when you've finished enjoying that slice your brioche rolls in half. Pop into the toaster for literally 30 seconds (even if you have it on the lowest heat, I found it burns really quickly).
Once your brioche is out, put together your sandwich, smushing raspberries against one side and half a scoop of ice cream on the other. Then squeeze your hot juicy peaches in the middle. And you are done. Come to mumma.
