4 great birthday cake recipes, to make for people who don't like birthday cakes

The Easiest Ever Ice Cream cake by A Beautiful Mess

Happy Sunday-but-really-like-a-Saturday-morning! I hope you are enjoying the long weekend. Mine is being a little laborious at present, as we are attempting to paint our white lounge white, but we're making it up to ourselves with plenty of homemade aperol spritzes in the sun, and takeaways in front of the telly once we've finished for the day.

So anyway, birthday cakes. Most of my friends birthdays seem to congregate around summer, don't ask me, must have been something in the water in the winter months of the late 1980s. Despite my humungous addiction to sugar, I am not the biggest fan of birthday cake. All the butter cream icing and the dense rich cake, it is just too much.

I was perusing the motherhood section of Cup of Jo the other day, as you do when you are 27 and childless, and was reading about her son Toby's lovely little birthday party, and also about his donut hole birthday cake. (A polysterene cone similar to the ones you use for Croquembouche but with donuts attached. Come to think of it a tower of profiteroles would be a pretty banging b-day cake too. Anyhoo). Don't you just think it looks so charming and delicious, and also quite nice and light to just grab a donut hole after a day running around in the park? Here are 3 more birthday cake ideas and recipes that I love and challenge that status quo:

The Local Milk brown butter waffle cake with sorghum meringue butter cream -
Meringues, waffles. Oh my giddy ants. This is definitely what I am making myself for my birthday this year, though I'd be tempted to put loads of fun stuff like blueberries and chocolate chips in the waffles.

A Beautiful Mess's Easiest ever ice cream cake -
Ice cream cake depressingly doesn't seem to be a thing in the UK, unless you count Wall's Vienetta, which I don't know if you should. Oh to be part of the American dream where every birthday you gallop up to your local Baskin and Robin's to pick up an ice cream cake. A beautiful mess' oreo cookie recipe seems like a pretty worth substitute.

Adventures in cooking's Baklava birthday cake -
Totally meant to make this for my boo (sorry for calling you that Will) this year, but I didn't (sorry again), but mainly because I took him to freakin' New York and bought him all the sweet birthday things (that sounded a bit dodge, I meant edible sweet things. That didn't make that any better, but you get my point, donuts, cheesecakes etc. You have a filthy mind). Next year though, I am all over this honey cinnamon baklava cake. If you'd prefer more of a birthday cake with a hint of baklava than this full on filo pastry dream, Sweet Gastronomy's Baklava birthday cake also looks *insert emoticon of that hand making the a-ok sign here*

PS. 3 ways to brunch with baked ricotta
