These waffles are a twist on one of my go to waffle recipes - A Beautiful Mess' Sour cream and caramelized banana waffles.
But I've added a teeny bit of booze to the sour cream, the left over cranberries you didn't need for your sauces and some Christmassy spices and huzzah. Christmas Waffles, perfect with a glass of bucks fizz to start off your big day.
Ingredients:
90g plain flour
30g cornflour
150g sour cream
80ml olive oil (or rapeseed, coconut, vegetable...)
80ml milk
1 egg
1 teaspoon of vanilla essence
1/2 teaspoon of cinnamon
1/2 teaspoon of ginger
1/4 teaspoon of nutmeg
1/2 baking powder
a small handful of dark chocolate chips
4 clementines
2 tablespoons of your favourite Christmas tipple - I tried mine with brandy and ginger wine
Powdered sugar to serve
Method:
Mix together dry ingredients: flour, cornflour, spices and baking powder.
Whisk egg and then beat in the egg, milk and oil into the dry mixture
Take 1 clementine, grate zest, then squeeze in juice to mixutre.
Just before adding the batter to the waffle maker, add in a handful of dark chocolate chips and handful of fresh cranberries (or defrosted frozen ones).
Once the waffles are out of the machine, serve with the segments of 2 of the clementines, and juice the last remaining.
Top with a sprinkling of powdered sugar.
